
The perdiz is the South American equivalent of the Partridge. Unlike in Europe, all of the Perdiz in South America are from wild stock. The perdiz are typically shot over hunting dogs such as pointers in a walked up fashion - this is hunting at its most natural. Guests typically head out in pairs with one dog handler between them. The dogs work their magic which is a wonder to behold. Once they go on point, the guests walk onto the birds and the handler tells the dogs to flush. The covey will typically break low and away from the guns who will do their best to shoot them, which is not an easy task.
